This soba restaurant is a directly operated branch of “Takefu Seimen,” celebrating its 100th anniversary, and is located at the “Echizen Takefu” roadside station.
Echizen Oroshi Soba, made with stone-ground buckwheat flour from Fukui Prefecture, cultivated and milled at the company’s own farm, preserves the traditional aroma and texture. It is characterized by its thick, firm noodles and smooth, slippery finish.
When served with spicy grated daikon and bonito flakes, it offers a simple yet profoundly rich flavor.
Fukui specialties, such as sauce katsudon, are also highly recommended.
The soba soft serve, made generously with house-grown buckwheat flour sprinkled with crispy toasted buckwheat grains, is also very popular.
